Cependant, la plupart des maladies virales d\u2019origine alimentaire ne sont pas signal\u00e9es, car les personnes ne consultent pas un m\u00e9decin lorsqu\u2019elles pr\u00e9sentent un sympt\u00f4me (par exemple, une gastro-ent\u00e9rite l\u00e9g\u00e8re, le sympt\u00f4me le plus courant des maladies virales d\u2019origine alimentaire). En outre, la <strong>d\u00e9tection des virus dans les denr\u00e9es alimentaires est difficile<\/strong>, car de nombreux virus sont cultiv\u00e9s en laboratoire et exigent des techniques mol\u00e9culaires avanc\u00e9es de d\u00e9tection.<\/p>\n<p>Mais certains virus, comme les bact\u00e9ries, <strong>peuvent contaminer les aliments et provoquer des maladies<\/strong>. La grande diff\u00e9rence r\u00e9side dans le fait que les virus ne se multiplient pas dans les aliments, car, lorsqu\u2019ils sont en dehors d\u2019un h\u00f4te, ils sont totalement inertes, une cellule h\u00f4te est donc n\u00e9cessaire pour qu\u2019ils puissent se multiplier et repr\u00e9senter un danger. Le mode de transmission des maladies virales d\u00e9pend donc en grande mesure de la r\u00e9sistance des virus en dehors d\u2019une cellule ou \u00e0 l\u2019air libre.<\/p>\n<p>Concernant les maladies virales d\u2019origine alimentaire, elles sont principalement caus\u00e9es par des <strong>virus ent\u00e9riques<\/strong>. Ces virus se transmettent par la voie f\u00e9cale-orale et peuvent donc potentiellement se retrouver dans les aliments ayant \u00e9t\u00e9 contamin\u00e9s par des mati\u00e8res f\u00e9cales lors de n\u2019importe quel stade de la cha\u00eene alimentaire.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Qu\u2019est-ce qu\u2019un virus\u00a0?<\/strong><\/p>\n<p>Un virus n\u2019est pas un organisme vivant \u00e0 proprement dit. Un virus est un <strong>parasite intracellulaire<\/strong> obligatoire <strong>incapable de s\u2019autor\u00e9pliquer<\/strong> et dont la taille varie de 20 \u00e0 300\u00a0nm. Lorsqu\u2019un virus trouve l\u2019h\u00f4te appropri\u00e9, <strong>il se reproduit en infectant les cellules de l\u2019h\u00f4te<\/strong>, o\u00f9 il parasite la machinerie subcellulaire et l\u2019utilise \u00e0 son avantage pour r\u00e9pliquer des particules virales, d\u00e9truisant finalement la cellule h\u00f4te.<\/p>\n<p>Dans sa forme la plus simple, un virus est constitu\u00e9 d\u2019un acide nucl\u00e9ique (ADN ou ARN) entour\u00e9 d\u2019une coque de prot\u00e9ines, appel\u00e9e capside. L\u2019association de la capside avec l\u2019acide nucl\u00e9ique forme la nucl\u00e9ocapside. Cette nucl\u00e9ocapside est la structure qui forme un virus nu. Dans d\u2019autres cas, le virus est constitu\u00e9 de la nucl\u00e9ocapside et d\u2019une enveloppe compos\u00e9e de lipides, de prot\u00e9ines et de glycoprot\u00e9ines, une structure qui forme un virus envelopp\u00e9. Mosby, Inc., an affiliate of Elsevier Inc.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Virus envelopp\u00e9s et nus<\/strong><\/p>\n<p>La pr\u00e9sence ou non d\u2019une enveloppe d\u00e9termine la r\u00e9sistance des virus au milieu ext\u00e9rieur (dessiccation, lumi\u00e8re ultraviolette, pH, milieu ionique, etc.) et ceci rev\u00eat une importance fondamentale en ce qui concerne le mode de transmission des maladies virales.<\/p>\n<p><strong>Les virus envelopp\u00e9s peuvent \u00eatre facilement inactiv\u00e9s par des solvants lipidiques<\/strong> (\u00e9ther, chloroforme, sels biliaires, d\u00e9tergents, etc.). Par cons\u00e9quent, un contact direct avec une personne ou des \u00e9l\u00e9ments inertes est n\u00e9cessaire pour qu\u2019ils puissent se transmettre. En revanche, les <strong>virus nus sont r\u00e9sistants \u00e0 ces solvants <\/strong>et peuvent \u00e9galement \u00eatre transmis par voie f\u00e9cale-orale, car ils conservent leur pouvoir infectieux dans l\u2019eau et peuvent r\u00e9sister au pH acide de l\u2019estomac et \u00e0 l\u2019activit\u00e9 des sels biliaires (Carballal et al., 2014).<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Maladies virales d\u2019origine alimentaire<\/strong><\/p>\n<p>Les <strong>maladies virales d\u2019origine alimentaire<\/strong> sont caus\u00e9es par une vari\u00e9t\u00e9 de virus ent\u00e9riques infectieux \u00e0 tr\u00e8s faibles doses <strong>qui se transmettent par voie f\u00e9cale-orale<\/strong>. En ce qui concerne le nombre de foyers \u00e9pid\u00e9miques d\u2019origine alimentaire associ\u00e9s \u00e0 ce type de virus, les plus importants du point de vue de la s\u00e9curit\u00e9 alimentaire virale sont le norovirus (famille\u00a0<em>Caliciviridae<\/em>), qui est \u00e0 l\u2019origine des gastro-ent\u00e9rites, et le virus de l\u2019h\u00e9patite\u00a0A (famille\u00a0<em>Picornaviridae<\/em>), qui provoque une h\u00e9patite aigu\u00eb. Tous deux sont des virus non envelopp\u00e9s (c.-\u00e0-d. nus), qui poss\u00e8dent un g\u00e9nome \u00e0 ARN et sont entour\u00e9s d\u2019une enveloppe de prot\u00e9ines \u00e0 structure icosa\u00e9drique.<\/p>\n<p>Les aliments les plus susceptibles d\u2019\u00eatre contamin\u00e9s par des virus ent\u00e9riques sont les mollusques bivalves, les l\u00e9gumes crus, les baies et tous les aliments susceptibles d\u2019\u00eatre contamin\u00e9s par un manque d\u2019hygi\u00e8ne au cours de la manutention de la part des personnes charg\u00e9es de les manipuler.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Mesures d\u2019hygi\u00e8ne pour \u00e9viter les risques de contagion.<\/strong><\/p>\n<p>Les virus se transmettent principalement par contact de personne \u00e0 personne ou avec des surfaces inertes contamin\u00e9es. (Ara\u00fajo P. et al. 2011)<\/em><\/strong><\/p>\n<p>Les produits d\u00e9sinfectants con\u00e7us pour la d\u00e9sinfection des surfaces et des milieux, ainsi que pour le lavage antiseptique des mains, <strong>sont d\u00fbment enregistr\u00e9s dans le cadre r\u00e9glementaire existant,<\/strong> d\u00e9fini par les r\u00e8glements suivants\u00a0:<\/p>\n<ul>\n<li><strong>R\u00e8glement (UE) n<sup>o<\/sup> 528\/2012<\/strong> concernant la mise \u00e0 disposition sur le march\u00e9 et l\u2019utilisation des produits biocides (connu sous le nom de Biocidal Products Regulation \u2013 BPR).<\/li>\n<li><strong>D\u00e9cret royal\u00a03349\/1983<\/strong>, du 30\u00a0novembre, approuvant le r\u00e8glement technique et sanitaire relatif \u00e0 la fabrication, la mise \u00e0 disposition sur le march\u00e9 et l\u2019utilisation de pesticides.<\/li>\n<\/ul>\n<p>Le r\u00e8glement ci-dessus \u00e9tablit que l\u2019efficacit\u00e9 virucide des produits doit \u00eatre d\u00e9termin\u00e9e selon les dispositions de la norme EN\u00a014476. Cette norme \u00e9tablit la m\u00e9thode d\u2019essais d\u2019efficacit\u00e9 face \u00e0 3\u00a0virus\u00a0: Poliovirus de type\u00a01 (famille\u00a0<em>Picornaviridae)<\/em>, Ad\u00e9novirus de type\u00a05 (famille\u00a0<em>Adenoviridae<\/em>) et Norovirus murin (famille\u00a0<em>Caliciviridae<\/em>), tous des virus nus. Toutefois, parmi les trois virus susmentionn\u00e9s, le poliovirus pr\u00e9sente une r\u00e9sistance chimique beaucoup plus \u00e9lev\u00e9e que les deux autres. \u00c0 cet \u00e9gard, la norme \u00e9tablit que, si un produit passe avec succ\u00e8s les essais pour le norovirus et l\u2019ad\u00e9novirus, mais \u00e9choue face au poliovirus, le produit a une \u00ab\u00a0activit\u00e9 virucide limit\u00e9e\u00a0\u00bb\u00a0; cela signifie qu\u2019il est efficace contre tous les virus envelopp\u00e9s, mais aussi contre l\u2019ad\u00e9novirus, le norovirus et le rotavirus.<\/p>\n<p>Par cons\u00e9quent, concevoir et mettre en \u0153uvre un plan de nettoyage et de d\u00e9sinfection (N+D) ad\u00e9quat s\u2019av\u00e8re essentiel pour \u00e9viter les risques de contagion.
