Pour cela, et comme partie essentielle de la <strong>mise en place d\u2019un syst\u00e8me HACCP<\/strong>, il est n\u00e9cessaire \u00e9tablir des <strong>protocoles de nettoyage et de d\u00e9sinfection<\/strong> adapt\u00e9s aux besoins particuliers de chaque installation, en utilisant des d\u00e9tergents et des d\u00e9sinfectants adapt\u00e9s au type de surface et aux r\u00e9sidus pr\u00e9sents. Cela permet d\u2019assurer l\u2019innocuit\u00e9 des aliments produits, en \u00e9vitant les risques de toxi-infections alimentaires, en prolongeant leur dur\u00e9e de conservation et en pr\u00e9venant les alt\u00e9rations organoleptiques.\r\n\r\nApr\u00e8s avoir nettoy\u00e9 une surface alimentaire, il est n\u00e9cessaire de proc\u00e9der \u00e0 une <strong>d\u00e9sinfection correcte<\/strong>. Parmi la vaste gamme de principes actifs biocides actuellement disponibles (chlore, ammoniums quaternaires, alcools, glutarald\u00e9hyde, peroxydes et peracides, amines, etc.), les principales caract\u00e9ristiques qu\u2019un produit d\u00e9sinfectant doit pr\u00e9senter sont\u00a0: large spectre d\u2019activit\u00e9, efficacit\u00e9 \u00e0 faible dose et faible impact environnemental. Par cons\u00e9quent, le choix du d\u00e9sinfectant \u00e0 utiliser est un facteur cl\u00e9 pour <strong>garantir une s\u00e9curit\u00e9 et une innocuit\u00e9 alimentaires maximales<\/strong>.\r\n<h4><strong>Caract\u00e9ristiques de la d\u00e9sinfection \u00e0 l\u2019acide perac\u00e9tique\u00a0 <\/strong><\/h4>\r\nL\u2019<strong>acide perac\u00e9tique<\/strong>, qui r\u00e9sulte de la r\u00e9action d\u2019\u00e9quilibre entre l\u2019acide ac\u00e9tique et le peroxyde d\u2019hydrog\u00e8ne, est un compos\u00e9 qui r\u00e9pond parfaitement aux exigences susmentionn\u00e9es.\r\n<h4>Large spectre d\u2019activit\u00e9 \u00e0 faible dose<\/h4>\r\nLe\u00a0<strong>m\u00e9canisme d\u2019activit\u00e9 de l\u2019acide perac\u00e9tique<\/strong>\u00a0se base sur l\u2019oxydation des composants structurels et fonctionnels des micro-organismes. Ce m\u00e9canisme s\u2019av\u00e8re particuli\u00e8rement appropri\u00e9 pour la destruction de la matrice extracellulaire polym\u00e8re g\u00e9n\u00e9r\u00e9e par les biofilms.\r\n\r\nUne concentration de 150\u00a0ppm d\u2019acide perac\u00e9tique est suffisante pour satisfaire \u00e0 la norme\u00a0EN\u00a013697, qui sert de r\u00e9f\u00e9rence pour \u00e9valuer l\u2019efficacit\u00e9 des produits biocides contre les micro-organismes\u00a0<em>Escherichia coli, Pseudomonas aeruginosa, Enterococcus hirae et Staphylococcus aureus<\/em>.<em>\u00a0<\/em>Concernant la\u00a0<em>Listeria monocytogenes<\/em>\u00a0et\u00a0la <em>Salmonella typhimurium<\/em>, selon la norme\u00a0EN\u00a013697, une concentration de 75\u00a0ppm d\u2019acide perac\u00e9tique est suffisante.\r\n\r\nL\u2019acide perac\u00e9tique satisfait \u00e9galement \u00e0 la norme\u00a0EN\u00a013697, activit\u00e9 bact\u00e9ricide ou fongicide, \u00e0 une concentration de 1\u00a0875\u00a0ppm et de 1\u00a0200\u00a0ppm, respectivement.\r\n\r\nPlusieurs \u00e9tudes montrent que son activit\u00e9 biocide, bas\u00e9e sur un <strong>fort pouvoir oxydant<\/strong> qui agit sur les prot\u00e9ines et le mat\u00e9riel g\u00e9n\u00e9tique (ADN\/ARN), le rend <strong>efficace contre les virus \u00e0 des<\/strong> concentrations comprises entre 400 et 1\u00a0500\u00a0ppm\u00a0<sup>[1]<\/sup>. Il est \u00e9galement <strong>efficace contre les micro-organismes sporul\u00e9s<\/strong><sup>\u00a0[2]<\/sup>.\r\n<h4>Faible impact sur l\u2019environnement<\/h4>\r\nLa forte r\u00e9activit\u00e9 de l\u2019acide perac\u00e9tique lui permet de se d\u00e9composer rapidement en acide ac\u00e9tique et en eau, avec un <strong>impact extr\u00eamement<\/strong> <strong>faible sur les eaux us\u00e9es et un haut degr\u00e9 de biod\u00e9gradabilit\u00e9<\/strong>. Surtout par rapport \u00e0 d\u2019autres principes d\u00e9sinfectants largement utilis\u00e9s comme l\u2019hypochlorite de sodium (qui, au contact des mati\u00e8res organiques et des eaux us\u00e9es, g\u00e9n\u00e8re des sous-produits nocifs, tels que les chloramines, les chloroph\u00e9nols ou les trihalom\u00e9thanes) ou des ammoniums quaternaires (qui sont une source importante d\u2019azote et ne se d\u00e9composent pas aussi rapidement que l\u2019acide perac\u00e9tique).\r\n<h4>D\u00e9sinfection des surfaces alimentaires \u00e0 l\u2019acide perac\u00e9tique<\/h4>\r\nTous ces avantages se sont traduits, au cours de ces derni\u00e8res ann\u00e9es, par une augmentation significative de l\u2019utilisation de l\u2019acide perac\u00e9tique comme d\u00e9sinfectant de premier choix dans l\u2019industrie alimentaire. La substance active est enregistr\u00e9e en tant que substance active biocide [conform\u00e9ment au r\u00e8glement sur les produits biocides (UE)\u00a0528\/2012] pour un usage sur les surfaces v\u00e9t\u00e9rinaires (TP3) et les surfaces alimentaires (TP4). Par cons\u00e9quent, les <strong>types d\u2019usages les plus courants<\/strong> sont les suivants\u00a0:\r\n<ul>\r\n \t<li><strong>Recirculation dans les nettoyages NEP<\/strong>\u2013 Il s\u2019agit de l\u2019usage le plus courant et le plus r\u00e9pandu dans l\u2019industrie alimentaire. Les concentrations les plus habituelles de principe actif dans le produit concentr\u00e9 sont de 5 et 15\u00a0%, tout en pouvant utiliser un traceur pour faciliter le contr\u00f4le automatique par conductivit\u00e9.<\/li>\r\n \t<li><strong>Nettoyage de surfaces ouvertes (OPC)<\/strong>\u2013 Par projection de mousse.
