Outbreaks of this disease are generally related to the ingestion of foods containing large amounts of this bacterium.\r\n\r\nIt is a <strong>relatively rare disease<\/strong>, since its incidence is quite low compared to other diseases associated with foodborne micro-organisms.\r\n\r\nHowever, Listeriosis is of special interest and concern because in its invasive form it is a serious disease, with <strong>very high lethality rates<\/strong> (between 10% and 30%). Moreover, <em>Listeria monocytogenes<\/em>\u00a0is an opportunistic pathogen that almost always affects the population at risk, while in the general population its infection does not usually lead to the development of the disease.\r\n\r\n&nbsp;\r\n<table width=\"100%\">\r\n<tbody>\r\n<tr>\r\n<td>\r\n<h4><strong>Risk groups:<\/strong><\/h4>\r\n- Pregnant women\r\n\r\n- Newborns\r\n\r\n- People with weakened defences:\r\n\r\no Chronically ill people\r\n\r\no Elderly people\r\n\r\no Persons undergoing certain medical treatments\r\n\r\n\u00b7 The probability of contracting the disease is about 20 times higher in pregnant women than in other healthy adults.\r\n\r\n\u00b7 Patients with HIV\/AIDS are 300 times more likely to suffer from listeriosis than people with a normal immune system.\r\n\r\n\u00b7 People over 65 years of age represent 62% of those affected, with a mortality rate of 19%.\r\n\r\n&nbsp;<\/td>\r\n<\/tr>\r\n<\/tbody>\r\n<\/table>\r\n<h4><strong>Incidence of Listeriosis<\/strong><\/h4>\r\nThe rate of human Listeriosis in the European Union in 2019 has a <strong>Prevalence of 0.46 cases per 100,000 people <\/strong>(EFSA 2020).\r\n\r\nThe EU trend of confirmed cases of Listeriosis has remained stable over the last three years (2621 cases in 2019).\r\n\r\n&nbsp;\r\n\r\n<a href=\"https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis.png\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16664\" src=\"https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis.png\" alt=\"casos reportados de listeriosis\" width=\"891\" height=\"734\" srcset=\"https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis.png 891w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-416x343.png 416w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-600x494.png 600w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-840x692.png 840w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-320x264.png 320w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-480x395.png 480w, https:\/\/www.proquimia.com\/wp-content\/uploads\/2019\/07\/casos-reportados-de-listeriosis-800x659.png 800w\" sizes=\"auto, (max-width: 891px) 100vw, 891px\" \/><\/a>\r\n\r\n&nbsp;\r\n\r\n<em>Trend in reported confirmed human <\/em><em>cases of listeriosis in the EU\/EEA, by month, 2009\u2013 2019<\/em>\r\n\r\nOn the other hand, global data (WHO 2018) show low prevalence (0.01-0.1 cases per 100,000 people) but very high mortality (20 - 30%) in susceptible individuals.\r\n<h4><strong>Infective dose<\/strong><\/h4>\r\nThe <strong>infective dose is not determined<\/strong> and depends on factors such as strain, host susceptibility (immune status, age,...) or the food matrix involved.\r\n\r\nAccording to a model used by EFSA, 92% of cases of invasive Listeriosis would be attributable to doses above 100,000 colony forming units (CFU) per serving.\r\n\r\nTherefore, assuming an average serving size of 50 g, this would correspond to a concentration of\u00a0<em>Listeria monocytogenes<\/em>\u00a0above 2,000 CFU\/g at the time of consumption.\r\n\r\nHowever, it is likely that less than 1,000 CFU\/g can cause disease in susceptible individuals.\r\n<h4><strong>Incubation period<\/strong><\/h4>\r\nGastroenteritis caused by\u00a0<em>Listeria monocytogenes<\/em>\u00a0has a <strong>relatively short incubation period, ranging from a few hours to 2 or 3 days<\/strong>.\r\n\r\nOn the other hand, in the severe, invasive form of the disease, the incubation period is usually 1 to 2 weeks, but can range from a few days to 3 months.\r\n\r\nThis prolonged incubation period makes it difficult to identify the food at the origin of the infection.\r\n<h4><strong>Symptoms of Listeriosis<\/strong><\/h4>\r\nListeriosis causes <strong>two forms of disease<\/strong> in humans:\r\n<ul>\r\n \t<li><strong>Non-invasive<\/strong>: a mild form that affects mostly healthy people. Symptoms are <strong>diarrhoea, fever, headache and muscle aches<\/strong>.<\/li>\r\n \t<li><strong>Invasive:<\/strong>it is more severe and affects high-risk groups. It is characterised by severe symptoms and a high mortality rate (20-30%). Symptoms include <strong>fever, muscle aches, septicemia and meningitis<\/strong>.<\/li>\r\n<\/ul>\r\n<strong>Pregnant women may experience mild<\/strong> flu-like <strong>symptoms<\/strong> (fever, fatigue and muscle aches) but <strong>Listeria can be transmitted to the fetus<\/strong> causing miscarriage, stillbirth, premature delivery or life-threatening infections in the newborn (bacteremia and meningitis). One third of confirmed cases of maternal-fetal\u00a0<em>Listeria monocytogenes<\/em>\u00a0infections result in miscarriage or fetal death.\r\n<h4><strong>Treatment for Listeriosis<\/strong><\/h4>\r\nListeriosis can be treated if diagnosed early<strong>. Antibiotics are used to treat<\/strong> severe <strong>symptoms<\/strong> such as meningitis. When infection occurs during pregnancy, immediate administration of antibiotics prevents infection of the fetus or newborn.\r\n<h4><strong>Transmission of Listeriosis<\/strong><\/h4>\r\n<em>Listeria monocytogenes<\/em>\u00a0<strong>can be transmitted to humans by vertical<\/strong> (mother-child transmission through the placenta<strong>), zoonotic and\/or nosocomial routes<\/strong>. Currently, 99% of cases of human Listeriosis are foodborne through the consumption of food of animal origin (meat, fish, milk, etc.) contaminated with pathogens.\r\n<h4><strong>How to prevent listeriosis?<\/strong><\/h4>\r\nIn general, the prevention of Listeriosis is similar to the prevention of other foodborne diseases and, for this reason, it is important to follow the five keys to food safety defined by WHO:\r\n<ol>\r\n \t<li>Maintain<\/li>\r\n \t<li><strong>Separate raw and cooked foods<\/strong>.<\/li>\r\n \t<li><strong>Cook completely:<\/strong><\/li>\r\n<\/ol>\r\n<ul>\r\n \t<li>At-risk groups should be aware of the foods that present risk and avoid consumption or consume them after heat treatment at more than 70\u00b0C.<\/li>\r\n<\/ul>\r\n<ol start=\"4\">\r\n \t<li><strong>Keep food at safe temperatures:<\/strong><\/li>\r\n<\/ol>\r\n<ul>\r\n \t<li>Always keep the refrigerator temperature below 4\u00b0C (39\u00b0F).<\/li>\r\n<\/ul>\r\n<ol start=\"5\">\r\n \t<li>Use water and safe raw materials:<\/li>\r\n<\/ol>\r\n<ul>\r\n \t<li>Respect the expiry dates of foods kept refrigerated.<\/li>\r\n<\/ul>\r\nIn addition, people in <strong>high-risk groups<\/strong> should:\r\n<ul>\r\n \t<li>Avoid consuming dairy products made with unpasteurised milk; cold cuts and ready-to-eat meat products such as sausages, hams, pates and spreads, as well as cold-smoked seafood (such as smoked salmon);<\/li>\r\n \t<li>Respect the shelf life and storage temperature written on the labels of ready-to-eat foods;<\/li>\r\n \t<li>Cooking before eating is another very effective way to kill bacteria.<\/li>\r\n<\/ul>\r\n<h4><b>Conclusiones<\/b><\/h4>\r\n<ul>\r\n \t<li>Listeriosis is a <strong>relatively rare disease but its invasive form is a serious disease<\/strong>, with high fatality rates especially in at-risk groups.<\/li>\r\n \t<li>Its <strong>infective dose is not completely determined<\/strong> and its incubation period can vary from a few hours to almost 3 months.<\/li>\r\n \t<li>To prevent the disease, we should be <strong>aware of the foods that present risk and follow the five keys to food safety proposed by the WHO<\/strong>.<\/li>\r\n<\/ul>\r\nPROQUIMIA, through its wide range of <strong>detergent and disinfectant products for surfaces and hands,<\/strong> develops customised Cleaning and Disinfection plans for each process and installation, in order to <strong>guarantee the maximum hygienic conditions of food<\/strong>.\r\n<h4><strong>Sources<\/strong><\/h4>\r\n<ul>\r\n \t<li>ACSA bulletin brief no.9 may-june 2018. 2018. https:\/\/bit.ly\/2Sc0jt3<\/li>\r\n \t<li>Published in the EU zoonoses report \u201cOne Health\u201d 2019. 2021. https:\/\/bit.ly\/3vyuFqS<\/li>\r\n \t<li>EFSA Journal.
