No obstant aix\u00f2, la majoria de les malalties virals transmeses pels aliments no es comuniquen perqu\u00e8 les persones no acudeixen al metge quan pateixen els efectes (p. ex. una gastroenteritis lleu, s\u00edmptoma m\u00e9s freq\u00fcent de les malalties virals transmeses pels aliments). A m\u00e9s, la <strong>detecci\u00f3 de virus en els aliments \u00e9s dif\u00edcil, <\/strong>ja que molts no es poden cultivar al laboratori i la seva detecci\u00f3 requereix t\u00e8cniques moleculars avan\u00e7ades.<\/p>\n<p>Per\u00f2 els virus, igual que els bacteris, <strong>poden contaminar els aliments i produir malalties<\/strong>. La gran difer\u00e8ncia \u00e9s que els virus no es multipliquen als aliments perqu\u00e8 fora d&#8217;un hoste s\u00f3n totalment inerts, requerint estar al seu interior per poder replicar-se i ser nocius. Aix\u00ed, doncs, la resist\u00e8ncia dels virus al medi extracorpori o ambiental ser\u00e0 de fonamental import\u00e0ncia en la forma de transmissi\u00f3 de les malalties virals.<\/p>\n<p>En el cas de malalties virals transmeses per aliments, aquestes estan principalment causades per <strong>virus ent\u00e8rics<\/strong>. Aquests virus es transmeten per via fecal-oral i, per tant, els podem trobar potencialment en qualsevol aliment que hagi patit contaminaci\u00f3 amb mat\u00e8ria fecal en qualsevol de les fases de la cadena aliment\u00e0ria.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Qu\u00e8 s\u00f3n els virus?<\/strong><\/p>\n<p>Els virus no s\u00f3n pr\u00f2piament organismes vius. S\u00f3n <strong>par\u00e0sits i<\/strong>ntracel\u00b7lulars obligats <strong>incapa\u00e7os de replicar-se per si mateixos<\/strong> i la seva mida oscil\u00b7la entre els 20 i 300 nm. A l&#8217;hoste adequat <strong>es reprodueixen mitjan\u00e7ant la infecci\u00f3 de les seves c\u00e8l\u00b7lules<\/strong>, on parasiten la maquin\u00e0ria subcel\u00b7lular, utilitzant-la en el seu propi benefici per produir m\u00e9s part\u00edcules virals acabant amb la destrucci\u00f3 de la c\u00e8l\u00b7lula hoste.<\/p>\n<p>En les formes m\u00e9s simples, els virus consisteixen nom\u00e9s en un \u00e0cid nucleic (DNA o RNA) envoltat d&#8217;una coberta proteica anomenada c\u00e0pside. L&#8217;associaci\u00f3 de la c\u00e0pside amb l&#8217;\u00e0cid nucleic forma la nucleoc\u00e0psid. Aquesta nucleoc\u00e0psida \u00e9s l&#8217;estructura que correspon a un virus nu. En altres casos, el virus est\u00e0 format per la nucleoc\u00e0psid i un embolcall compost de l\u00edpids, prote\u00efnes i glicoprote\u00efnes, estructura que correspon a un virus embolicat. Els virus embolicats adquireixen l&#8217;embolcall en sortir de la c\u00e8l\u00b7lula hoste per gemmaci\u00f3 (Cooper, 2009).<\/p>\n<p><a href=\"https:\/\/www.proquimia.com\/ca\/20200511_i1-2\/\" rel=\"attachment wp-att-11559\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11559\" src=\"https:\/\/www.proquimia.com\/wp-content\/uploads\/2020\/05\/20200511_I1.jpg\" alt=\"\" width=\"378\" height=\"515\" \/><\/a><\/p>\n<p><em>Murray PR, Rosenthal KS, Pfaller MA. Mosby, Inc., an affiliate of Elsevier Inc.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Virus embolicats i nus<\/strong><\/p>\n<p>La pres\u00e8ncia o no d&#8217;embolcall determina la resist\u00e8ncia dels virus al medi extern (dessecaci\u00f3, llum ultraviolada, pH, medi i\u00f2nic\u2026) i aix\u00f2 \u00e9s de fonamental import\u00e0ncia en la forma de transmissi\u00f3 de les malalties virals.<\/p>\n<p><strong>Els virus amb embolcall s&#8217;inactiven f\u00e0cilment amb solvents lip\u00eddics <\/strong>(\u00e8ter, cloroform, sals biliars, detergents\u2026). Per aix\u00f2, per a la seva transmissi\u00f3, cal un contacte directe persona a persona on a trav\u00e9s d&#8217;elements inerts. Per contra, <strong>els virus nus s\u00f3n resistents a aquests solvents <\/strong>i tamb\u00e9 es poden transmetre eficientment per via fecal-oral ja que conserven la seva infectivitat a l&#8217;aigua i poden resistir el pH \u00e0cid de l&#8217;est\u00f3mac i l&#8217;acci\u00f3 de les sals biliars (Carballal et al ., 2014).<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Malalties virals transmeses per aliments<\/strong><\/p>\n<p>Les <strong>malalties virals <\/strong>estan causades per diversos virus ent\u00e8rics que requereixen dosis infeccioses particularment baixes i que <strong>es transmeten per via fecal-oral<\/strong>. Si atenem al nombre de brots alimentaris associats a aquest tipus de virus, els m\u00e9s destacats des de la perspectiva de la seguretat v\u00edrica dels aliments s\u00f3n Norovirus (fam\u00edlia <em>Caliciviridae<\/em>), causant de gastroenteritis, i el virus de l&#8217;Hepatitis A (fam\u00edlia <em>Picornaviridae<\/em>) que origina hepatitis aguda. Tots dos s\u00f3n virus que no tenen embolcall (nus), tenen genoma de RNA i estan envoltats per una coberta proteica amb estructura icosa\u00e8drica.<\/p>\n<p>Entre els aliments que presenten un risc m\u00e9s gran d&#8217;estar contaminats per virus ent\u00e8rics destaquen els mol\u00b7luscs bivalves, les verdures que es consumeixen crues, les fruites tipus baia i qualsevol aliment susceptible de patir una contaminaci\u00f3 a partir d&#8217;una manipulaci\u00f3 higi\u00e8nica deficient per part del personal manipulador d\u2019aliments.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Mesures higi\u00e8niques per evitar contagis.<\/strong><\/p>\n<p>La principal forma de contagi dels virus \u00e9s el contacte persona-persona o a trav\u00e9s de superf\u00edcies inertes contaminades. Com s&#8217;ha comentat, els virus ent\u00e8rics, de gran resist\u00e8ncia ambiental, tamb\u00e9 es poden transmetre per via fecal-oral.<\/p>\n<p>Aix\u00ed doncs, la gran majoria dels contagis per virus es poden prevenir amb mesures higi\u00e8niques correctes, com la higiene freq\u00fcent de mans, la neteja i desinfecci\u00f3 de superf\u00edcies contaminades i la correcta manipulaci\u00f3 dels aliments (evitar manipulaci\u00f3 directa amb les mans, correcta cocci\u00f3 i rentat i desinfecci\u00f3 de verdures).<\/p>\n<p>A Proquimia disposem d&#8217;una \u00e0mplia <strong>gamma de productes desinfectants<\/strong>, basats en una gran varietat de principis actius biocides (amonis quaternaris, clor, alcohols, trialquilamines, glutaraldehids, etc.), que permeten aplicar diversos mecanismes d&#8217;acci\u00f3 per a la inactivaci\u00f3 dels diferents tipus de virus existents.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/www.proquimia.com\/ca\/20200511_i3-2\/\" rel=\"attachment wp-att-11565\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11565\" src=\"https:\/\/www.proquimia.com\/wp-content\/uploads\/2020\/05\/20200511_I3.jpg\" alt=\"\" width=\"368\" height=\"305\" \/><\/a><\/p>\n<p><strong><em>Acci\u00f3 dels biocides davant dels virus. (Ara\u00fajo P. et al. 2011)<\/em><\/strong><\/p>\n<p>Els productes desinfectants disponibles, per a desinfecci\u00f3 de superf\u00edcies i ambients, aix\u00ed com per al tractament antis\u00e8ptic de mans, <strong>estan degudament registrats en el marc legal existent,<\/strong> definit pels reglaments seg\u00fcents:<\/p>\n<ul>\n<li><strong>Reglament (UE) n\u00b0 528\/2012<\/strong> sobre biocides (conegut com a BPR-Biocidal Products Regulation)<\/li>\n<li><strong>Reial decret 3349\/1983,<\/strong> de 30 de novembre, pel qual s&#8217;aprova la Reglamentaci\u00f3 tecnicosanit\u00e0ria per a la fabricaci\u00f3, comercialitzaci\u00f3 i utilitzaci\u00f3 de plaguicides.<\/li>\n<\/ul>\n<p>La reglamentaci\u00f3 anterior estableix que l&#8217;efic\u00e0cia viruc\u00efda dels productes s&#8217;ha de demostrar mitjan\u00e7ant la norma EN14476. Aquesta norma realitza assaigs davant de 3 virus: Poliovirus tipus 1 (fam\u00edlia <em>Picornaviridae)<\/em>, Adenovirus tipus 5 (fam\u00edlia <em>Adenoviridae<\/em>) i Norovirus murino (fam\u00edlia <em>Caliciviridae<\/em>), tots ells del tipus no encapsulats. Dels 3 virus, el Poliovirus presenta una resist\u00e8ncia qu\u00edmica molt superior als altres dos. Per aix\u00f2, la norma estableix que si un producte passa els assaigs nom\u00e9s per a Norovirus i Adenovirus, per\u00f2 no per a Poliovirus, es considera d&#8217;\u201cactivitat viricida limitada\u201d, la qual cosa equival a dir que presenta efic\u00e0cia davant de tots els virus amb embolcall, m\u00e9s Adenovirus, Norovirus i Rotavirus.<\/p>\n<p>Per tant, el disseny i la implantaci\u00f3 d&#8217;un pla adequat de Neteja i Desinfecci\u00f3 (L+D) \u00e9s fonamental per evitar riscos de contagis. Els especialistes del Departament T\u00e8cnic de Proqu\u00edmia poden ajudar a dissenyar programes personalitzats de L+D, assessorar-lo en la identificaci\u00f3 i avaluaci\u00f3 de riscos en els punts cr\u00edtics de contacte, per evitar contaminacions creuades entre empleats, i proporcionar als operaris formaci\u00f3 i sensibilitzaci\u00f3 sobre bones pr\u00e0ctiques d&#8217;higiene.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Refer\u00e8ncies bibliogr\u00e0fiques:<\/strong><\/p>\n<p>AESAN. 2011.
